So, what happened to Amiko, after #176, I really don't see anything more of her. Did she just drop off the map, or did I miss something?

Amiko was in Wolverine: Xisle, not sure if that was before or after the issue you mentioned though.

Amiko Kobayashi (yes, she has a family name) was apparently killed by Sabretooth in Wolverine #175, only to be somehow saved and returned to Wolverine at the Xavier Mansion under the direction of Weapon X Director Malcolm Colcord in Wolverine #176.
Wolverine: X-Isle seems to be her next appearance since she is once again (or still) in New York. But she disappears from the story early-on and we get no further information about her.
Her most recent appearance was in Japan again during Wolverine: Soultaker where Amiko discovers that she is descended from a line of warrior-priestesses called the Shosei. In the end she decides to take-up study with the last of the Shosei to carry on the tradition.
She hasn't been seen since.

Hmmm, well at least they left her doing something instead of just dropping her like a few other characters in Logan's life...but if she's studying to be a 'shosei', then that might have future story line written all over it.

It appears to be canon - at least insofar as it's not a cross-over between two publishers and it's not set in an alternate timeline or future.
I suppose this fate makes as much sense as any for a girl who's mother was killed by a dragon. and I guess it's perferable to being kidnapped by Wolverine's enemies on a roughly annual basis.

killed by a dragon...wow that's ah...something. By the way, what exactly is a Shosei, and second, Logan's alright with her doing this?

Apparently it was a member of Lockheed's species that came to earth via a dimensional portal that screwed-up it's relative proportion, making it just one in a long line of giant monsters to invade Japan.
The priestesses of the Shosei are the mystic guardians of Japan, and have been protecting Japan from mystic sources of evil for over 800 years in secret using ancient magic.
Logan didn't have any problem with Amiko being trained by Mana Yanowa as a Shosei because it's Amiko's birthright - Amiko is descended from Shosei priestesses. And why should he? He left her in the care of a thief (Yukio) for years after Mariko died, so is it worse for her to be trained as a priestess or trained as a thief?
By which part?
